MIXED VEGETABLE CHUTNI




Ingredients :
  • Pumpkin (Kumro)                      ~    50 gms
  • Sweet potato (Ranga Alu)         ~    50 gms
  • Brinjal (Begun)                          ~    50 gms
  • Raw papaya (Kacha Pepe)       ~    50 gms
  • Green tomato (Sobuj Tomato)  ~    100 gms
  • Beans                                       ~    50 gms
  • Turmeric powder                       ~    1/2 teaspoon         (Holud Guro) 
  • Mustard seeds (Sorshe)           ~    1 teaspoon
  • Tamarind (Tentul)                    ~    20 gms
  • Red chillies (Sukhno Lanka)    ~    2 nos.
  • Sugar                                       ~    1/2 cup 
  • Vegetable oil (Sada Tel)          ~    4 teaspoons 
  • Water                                       ~    3 cups 
  • Salt                                          ~    to taste




Method :
  • Cut all vegetables into small juliennes and wash thoroughly.   
  • Soak tamarind in water and extract the pulp.  
  • Heat oil in a frying pan, add red chillies and mustard seeds and fry till the mustard seeds crackle.  
  • Add all the vegetables and fry till slightly brown.  
  • Add turmeric powder, salt, tamarind pulp and sugar .  
  • Reduce to medium heat and cook for 10 min approximately, stirring continuously till the vegetables are tender.  

Your mixed VEGETABLE CHUTNEY is ready to be served.
