Ingredients :
- Pumpkin (Kumro) ~ 50 gms
- Sweet potato (Ranga Alu) ~ 50 gms
- Brinjal (Begun) ~ 50 gms
- Raw papaya (Kacha Pepe) ~ 50 gms
- Green tomato (Sobuj Tomato) ~ 100 gms
- Beans ~ 50 gms
- Turmeric powder ~ 1/2 teaspoon (Holud Guro)
- Mustard seeds (Sorshe) ~ 1 teaspoon
- Tamarind (Tentul) ~ 20 gms
- Red chillies (Sukhno Lanka) ~ 2 nos.
- Sugar ~ 1/2 cup
- Vegetable oil (Sada Tel) ~ 4 teaspoons
- Water ~ 3 cups
- Salt ~ to taste
Method :
- Cut all vegetables into small juliennes and wash thoroughly.
- Soak tamarind in water and extract the pulp.
- Heat oil in a frying pan, add red chillies and mustard seeds and fry till the mustard seeds crackle.
- Add all the vegetables and fry till slightly brown.
- Add turmeric powder, salt, tamarind pulp and sugar .
- Reduce to medium heat and cook for 10 min approximately, stirring continuously till the vegetables are tender.
